Greek Pleasures
January 30, 2012Tzatziki is a yogurt-based dip originally from Greece. Greek yogurt gives this fresh preparation a thick texture, and it can be used in a variety of ways: as a dip with bread, whole-wheat pita or raw veggies, as a spread for sandwiches or on crackers, as a sauce in burgers or on meat brochettes, etc. Also, since it’s so easy to make and it requires only a few ingredients, it’s the perfect solution for an impromptu visit.
Yields approximately 2 cups
Preparation time: 20 minutes + refrigeration (2 hours total)
Ingredients
- 1 English cucumber, peeled, seeded, grated
- 1 tsp. (5 ml) salt
- 1 cup (250 ml) Oikos plain Greek yogurt
- 1 clove garlic, chopped
- 2 tsp. (10 ml) lemon juice
- 2 tsp. (10 ml) olive oil
- 1 tbsp. (15 ml)Â chopped fresh mint
- To taste salt and pepper
Preparation
- Place the grated cucumber in a strainer over a bowl or on a plate, to collect the liquid. Sprinkle with salt and refrigerate for about an hour.
- Rinse the cucumber under cold water to remove any excess salt. Press the cucumber into the bottom of the strainer with a spoon to remove as much water as possible.
- In a medium-size bowl, mix the Oikos Greek yogurt, garlic, lemon juice, olive oil, mint and the grated cucumber. Mix with a spoon. Add salt and pepper, to taste.
- Let sit in the fridge for an hour so that the flavours come together. Serve with toasted whole-wheat pita wedges or raw veggies.
