Ah, chicken salad sandwich… A staple at birthday buffets, family gatherings and potlucks everywhere. I must admit, I love this classic sandwich, especially on plain white bread (with the crust removed). However, the dietitian in me simply won’t let me bite into one every week; that is, when it’s loaded with mayo or served on white bread, which contains minimal fibre.

But when I have a craving for this classic sandwich, I try to come up with a funkier version, that’s also lighter and more nutritious. Today, I’d like to share with you a simple recipe, which I hope will please your taste buds as much as it did mine.

Serves: 2

Preparation time: 15 minutes

INGREDIENTS

  • ÂĽ cup (60 ml) Oikos 2% plain Greek yogurt
  • 2 tsp. (10 ml) liquid honey
  • 2 tbsp. (30 ml) light mayonnaise
  • 2 tsp. (10 ml) Dijon mustard
  • ½ tsp. (2 ml) sambal oelek
  • 120 g (about 1 cup/250 ml) chopped cooked chicken
  • 1 celery stalk, chopped
  • 1/3 cup (75 ml) halved green grapes
  • 2 whole wheat pitas
  • To taste lettuce for garnish

PREPARATION

  1. In a small bowl, whisk the Greek yogurt, honey, mayonnaise, Dijon mustard and sambal oelek until smooth.
  2. Add the chopped chicken, celery and green grapes. Mix with a spoon.
  3. Spread the chicken preparation over the two pitas.
  4. Garnish with lettuce to taste and serve as a wrap.
