To prepare

  1. Grate the zucchini over a large bowl, addsalt and let sit for approximately 45 minutes. Then, squeeze the zucchini in your hands, working in small bunches to removeexcess liquid (it will not be used), and place the grated zucchini in another large bowl.
  2. Add the scallions, dill, feta cheese and olive oil. Mix together thoroughly. Then, add the eggs, season with salt and pepper, and gradually stir in the flour until the dough comes together, forming a homogeneous paste. Add a little flour if needed. After oiling your hands lightly, shape the zucchini fritters into little balls.
  3. Meanwhile, heat up some olive oil in afrying pan. Fry the zucchini fritters until they are golden brown on both sides (2 to 3 minutes per side should be sufficient).
  4. Lay down a few layers of paper towels on a baking sheet and align the zucchini fritters on it. Leave them to rest for a few minutes to let the excess oil drain out.

Serve the zucchini fritters on a platter, together with a splash of OIKOS yogurt on the side. Enjoy this deliciously healthy Mediterranean recipe as a starter, before your main course.

Zucchini Fritters

What’s easy to prepare, smells and tastes like heaven, and is just enough to start off your meal? The answer is what is found on menus all over Greece – zucchini fritters – a very typical dish that when served with a dab of Oikos Greek yogurt, is a guaranteed table-pleaser!

  • 7 large zucchini (approximately 3 heaped cups of grated zucchini)
  • 1 cup of fresh dill, chopped
  • 1 bunch of scallions, finely chopped (including light green parts)
  • 1 ½ cup of feta cheese, crumbled
  • 4 eggs
  • 1 cup of flour (adjust according to the textureobtained with the mixer by adding a bit more flour, as needed)
  • Salt and pepper
  • 4 tablespoons of olive oil
  • A bit of olive oil for frying
  • Plain Greek Oikos Yogurt, to taste
